Most of the time a restaurant's more expensive bottles aren't sold by the glass so I doubt this is much of an issue.

I've seen a restaurant sell Kendall Jackson wine as their top brand for 7 dollars a glass when the bottle only retails for like 20 bucks

Flemings has a very large upper tier wine list by the glass. This was decided during restaurant development in order to attract more women clientele in a traditionally men's environment. That of the steakhouse. It's a fine list too and not meant to be a scam. I've had some good glasses then ordered a bottle. It's a great way to do it.

And above it's Orin Swift and if you are getting Saldo at $16.00 you are doing very well because that's a $21.00 wholesale bottle. It's a nice Zinfandel that I've enjoyed. If you can get your hands on one of Dave Phinney's Mercury Head do yourself a favor and spend the money and drink it. Very nice. He created Orin Swift.
