At your hunting lease all you would ever need is the 800. I have a 700efi in mine and it struggles a little bit on some of the terrain but over all has been great. I would like to have the extra power especially in a bigger machine.
I'm not a racer so the idea of more torque and more miles out of a tank appeals to me with the diesel.

I plan to use mine to pull discs and plows too. and will frequently have it in water over the tires.
