Actually they engage hand to hand and always try to hold back their signature weapons like Gipsy's plasma cannons and swords, Stryker's wristblades and shoulder missiles, because the Kaiju constantly adapt to whatever new weapon gets thrown at them so it makes sense to try to take it down hand to hand if possible, at the very least beat it down to a point where you can then employ the special/advanced weaponry to go for the killshot.

Not to mention this complaint, in its most basic form, applies to 90% of movies, not even just sci-fi/action movies. You know why they can't just do X? Because then you're left with no movie moron.

Why didn't Quint just go back and get a bigger boat?
