I think it would be a cool idea to have an "omelet station" like you see at casino buffets and such. Line up several bowls in your kitchen filled with potential fillings (ham, bacon, various cheeses, green onions, etc.) .. have 2 skillets on the burners and a big ol' mess of eggs and milk ready to go. Have everyone choose what they want in their omelet then whip it up.

I've done a breakfast taco station, where I make a big pan of scrambled eggs, and then put out bowls of crumbled breakfast sausage, bacon, cheeses, potatoes, salsa, green onions, etc. people made their own tacos. Seemed to go over well.
