You can cook it to your desired temp in a slow oven (like 180 or even 160 if your oven will hold that low). Then brown it with a torch. It takes cooking it overnight but I've had great results with this method.
Salt and pepper.
I've also done the whole blast it in the oven at 550 for 30 minutes or whatever then kill the heat but keep the door closed for 3 hours. Didn't work out near as well as the method above.
I cook mine to mid rare. If some want theirs cooked more I throw their slice on the grill or in the grill pan until it's done to their liking.
Don't even try to cook one without a probe thermometer. Good luck and enjoy. It's one of the finer things in life.
