I smoked two turkeys to have leftover meat to freeze for gumbo, jambalaya, turkey spaghetti, enchiladas and so on. We also take the carcass and make our own stock. The smokey stock adds delicious depth to any of the above dishes.

I made a giant pot of turkey stock yesterday. One fried turkey carcass, one roasted turkey carcass, 4 quartered onions, 5 ribs of celery, 6 bay leaves, handful of peppercorns, and a bell pepper. Simmered it on low for 7 hours. Froze it in thirds for the base of three future gumbos.
