You should at least play ac2. It was the best one all around.

Would be a huge mistake. Ranking the games from best to worst IMO:
AC2
Brotherhood
AC3
Revelations
...
...
...
AC1 (by far the worst, but I'm glad I played it for the story tie-ins)
