Cooked a variation of this 4 years ago for Florida. Started with his recipe then screwed around as one typically does whilst drinking and cooking. Came out fantastic. So last weekend I did a trial run for some friends and once again, awesome. Doing it this weekend.

Try to get some jaw meat. It tends to be a little more tender.
Also I wouldnt brown it. Just toss it in 5-10 minutes before you add your stock and rice.
