Meh, it's a fun conversation piece for a tailgate.
Consider using alligator sausage-pretty widely available around BR (AG stores, Winn Dixie). He mixes enough pork with it that it would do well in jambalaya, and if the run-up in prices on frog legs before the TCU game is any indication, gator meat is likely to be pricey this week.
