The key to a good New Orleans style cafe au lait:

1) 1 part strong dark roast with chicory
2) 1 part scalded, not steamed milk
3) And this is key: pour both in simultaneously and equally. You will not get the same results otherwise.


Each step is equally important. That's all there is to it.
