Morning Call cafe au lait

I love Morning Call coffee and was wondering if anyone knows if they do anything different as far brewing goes because I'd like to replicate it at the house.

The key to a good New Orleans style cafe au lait:
1) 1 part strong dark roast with chicory
2) 1 part scalded, not steamed milk
3) And this is key: pour both in simultaneously and equally. You will not get the same results otherwise.

Coffee Call in BR makes an awesome cafe au lait and they use double strength coffee and scalded milk. Most places use just a strong dark roast but usually I can't even taste the coffee.

The only thing I would think as diffirent is a stouter chicory coffee than Cafe Du Monde which makes me think French Market for the coffee portion of a cup.
