They'd get just about the same view at "Mix" at the Mandalay Bay.
A few favorite Vegas fine dining restaurants: Joel Robuchon, Alize(the view at sunset is top notch), Bartolotta, SW Steakhouse.
Word of advise: have them spend as little time as possible at Mandalay bay.
As for as sushi.... I'm not your guy.
