If the viewer thinks its a "stretch" for Pinkman to figure this out after Huell lifts his weed, they havnt been paying close enough attention.
Between the confession, and Jesse finally confronting Walt about his manipulation, and realizing the truth about his former mentor, this is probably the best single script ever written for a TV show.
I pity those of you who missed the impact of this earth-shattering episode because you were busy going "wait a minute - it was LILY OF THE VALLEY NOT RICIN?!?!?"
Please. Keep up. It's only the best written show EVER.

Well Walt knew Lilly of the valley was common, kids may get into it. He wasn't going to use ricin because he probably didn't want to kill the kid. He knew the cha ces of air oval were better with Lilly of the valley. But...if he died then that would be summed up as collateral damage.
He played on someone Jesse was close to, someone who was ok with killing kids to get a job done. Walt knew he had a day or two at the most to kill Gus. And he did..
With the poison he used the kid recovered an d it all looked like he just got into some local plant berries. Common for kids to do apparently.
So Walt's arse was covered, then he brings the fake ricin cigarette over and gives Jesse peace at mind. Was all good, perfect manipulation until Saul screwed up + spilled the beans.

Just the fact that so many loyal viewers were confused by this tells me that the writers didn't do their jobs (unless their intent was to confuse the viewers).

So you want everyone to pay close attention, but not so close that they see the plot holes? When it's a near perfect show, the imperfections will stand out. Get used to it.
