I realize this, but it just seems console gaming is the only technology related market that does this.

Gaming is far younger than most technology markets and the demographic it attracts has a lot of people without a large amount of steady or disposable income. This makes super fast advances not super feasible (and with the poor financial situation of most markets, I doubt developers can sustain constant increases in budget).
