Only advice I can offer is to make damn sure you have the proper licensing and permits to carry them across state lines for sale. I have a friend that is still paying for that mistake from 20 years ago. You cross state lines with seafood without the proper licensing and permits, they'll pull you over in the first mile.

Mississippi is great because they don't consider crawfish seafood.....no permits needed
