Love me some ponce, brown it turning often, poke a few holes in it when it starts to swell up. After browned well on all sides add trinity and sautee until tender. Then add fresh garlic, parsley and add water/stock then return ponce to pot. Simmer about an hour and a half, makes a really good gravy, Cook some rice

this. we always just brown it, add seasoning and aromatics, make a gravy, and let it simmer for a while. slice and serve over rice.

one of my favorite meals...of course, i don't think i've ever bought a green one. we always bought the smoked ones.
