i don't think it's going to change that much over the course of the within 20 minutes they get their next glass.

and if they were experts, wouldn't they be able to tell the difference between a wine when it's been opened for a few minutes versus 30-40 minutes?

Especially knowing that if you have ever been to wine country they spend half the time telling you about breathing, and opening up...yadda yadda.
