Each panel of four judges would be presented with their usual "flight" of samples to sniff, sip and slurp. But some wines would be presented to the panel three times, poured from the same bottle each time. The results would be compiled and analysed to see whether wine testing really is scientific.

Quote from the "study" with the most important part bolded. Wines breath once opened so it doesn't surprise me that experts can't tell that they are drinking the same wine over the course of the tasting when its from the same bottle.

that's it.

I cant imagine these experts aren't decanting, therefore making your argument moot. Or they are pouring from the bottle, where no matter the time open doesn't allow enough surface area to breath. Either way the argument is not valid.

Many studies over many years, over many areas, about many things wine snob all show the same thing.

i don't think it's going to change that much over the course of the within 20 minutes they get their next glass.

and if they were experts, wouldn't they be able to tell the difference between a wine when it's been opened for a few minutes versus 30-40 minutes?

if they have such good palates as to describe a wine as having "violets, mocha, and cloves [that] are layered into the rich, sumptuous finish," shouldn't they be able to tell that they're drinking the same wine? it's not going to breathe and oxidize that much over the course of a 20 minute tasting that it tastes like a different wine.
