Auto insurance question.... Stacked or Non-Stacked coverage...

Been shopping the wife's and my auto insurance around and have noticed that my current policy has stacked uninsured motorist bodily injury coverage and most of the quotes I'm getting are steering me away from such coverage toward a non-stacked option.
Apparently the stacking allows you to multiply the coverage by the number of cars on the policy but it certainly commands a higher premium. In my case by eliminating the stacking option I could save $600 or so a year. I looked online and opinions vary whether or not the coverage is worth it or it the insurer would even honor it.
Anyone have thoughts on this?

You can probably get an umbrella liability policy for a higher amount for $600. Or the same amount for less.
That is if you even need the additional coverage.
ETA - I read that as stacked liability coverage. My comment doesnt look to apply to your situation.

This, all day long. Umbrella policies are very cheap and you can get at least $1,000,000 or more in coverage. They're very, very cheap ($20 a month).

An umbrella would not help in this situation.
