I will be fly fishing and/or spinning tackle fishing for tarpon on first two days.
The next three days we will be making day trips offshore, weather permitting, to follow shrimp boats and/or fish the rigs. Fall back plan will be fishing inshore and or crabbing if weather sucks.
Suggest species I should be targeting offshore or inshore, techniques, and bait choice.

I'm assuming you're going to meet up with a friend that has a set up down there?
I suggest yall go out to 300' of water (might be far from Texas coast) and try to hook up on some big AJ
Closer in and around shrimp boats you could load up on lemonfish/cobia/ling. Just pull up to a structure, beat on the side of the boat, throw the engines in reverse. Make a commotion. lemons are dumb and will come check out whats going on.. when he surfaces, throw EVERYTHING you have at him. Live bait, chum, artificial, toilet paper. You never know what he'll want to bite on

Port O'Connor?? Get ready for fat Specks, clear water and rocks (inshore). Never been offshore out of POC but I imagine it's full of AJ, kingfish, spanish mackerel, etc.
