What is the difference in a guided/set up turkey hunt vs.....

Apologies for delay-dinner. I was searching around for a guided turkey hunt in Texas and one ranch is priced "$200 for guided and set up price, and then an additional $200 to harvest if you want. So my question what the hell is harvesting mean. I tried to search it briefly and left with the conclusion that like B&C points you get a "better turkey" ,...or they will clean it for you.

It sounds like they will bring you out for $200 and then you pay an extra $200 if you kill a bird, weird
