New to this thread too. But the peanut butter seems a bit unnecessary, unless you like what it adds.

You already have your roux made, is the PB to thicken it? If so, why don't you just add a bit more flower, or add more oil and flower to make a bigger roux?

PB in a gumbo just seems innately wrong. But to each his own.

I've done the pb thing a couple of times and couldn't tell a difference.
