I'm doing paleo for Lent as well. Its been going fine, but I love experimenting with new ingredients.

Im gonna make almond flour/coconut flour/almond milk pancakes tomorrow, it should be interesting.

One thing I had trouble with today was the squash pasta. It was way too wet. How do you people make yours? I just julienned the squash and let it sit then sauteed. is salt ok on paleo?

Is kosher salt ok, or do I use sea salt?

I use both currently, rarely ever table salt.

I used a spaghetti squash recipe in this thread to make cheesy garlic "pasta" and in the comments people kept talking about their squash being too watery, how on earth? When I baked mine, it was drying out and still a bit crunchy.

To the person that mentioned adding additional sweeteners to a sweet potato, good lord. Aren't they sweet enough. Their sweetness is the main reason I can't stand sweet potatoes and I really want to like them!
