I don't usually keep them. If you've got the time... just cut it free from the bone and add it to your sausage/burger pile...

I always take the brisket, belly meat and rib meat and add it to my jerky stash. Can't tell the difference.

Boil them down, then use the broth and little jiblet pieces of meat that fall off the bone for a stew or soup.

I have them smoked in VP and use for seasoning meat in beans and gumbo.
