And I freaking Love it. I'm usually a DBZ, DBZ:GT, Inuyasha fan but decided to go outside my norm and am really interested in this.
On S1E4 and am really enjoying it. Does FMA keep getting better?

Yes. It's a flat out amazing show. It puts DBZ, DBZ:GT, and Inuyasha to shame. Hopefully it broadens your horizons to starting to watch the better animes. I love DBZ for what it is, but it's far from great. Hell, Naruto is better, imo. Full Metal Alchemist is really good.
ETA: May also want to check out FMA: Brotherhood, which is a different version of the show that more closely follows the graphic novels apparently.

Excellent series, and yes it keeps getting better.

Once you get through the whole thing - Check out the movie. The first one, not the second one, is particularly good and kinda cool the way it "crosses over" (not going to give away any more than that).

I just started watching and I'm past the part where the Iron Alchemist is trying to cover up the Chimera girl who was blown to bits all over the alley wall. Who the hell is this guy who seems to have possessed his brothers body and is on a mission to kill state alchemists.

FMA is a different rendition of the show. It will have some similarities to Brotherhood, but they go two different directions. As another poster said, Brotherhood follows closely with the graphic novels. It's also 5x better than FMA.
With that said, I actually watched FMA before I watched Brotherhood, and wasn't disappointed with either.

Watch FMA first then the follow up movie. Then start FMA: Brotherhood.
FMA is more of an emotional story, but I think Brotherhood is a better story, as it follows the manga much more closely. The stories are almost identical up until like the 15th or so episode. The voice actors are mostly the same too because they are both dubbed by Funamation (DB:Z too).
