Gris, the more I think about it, the more I think you are already on the right track with this.

A layer of chili, layer of your spicy cheese, a layer of tamales, and then a thin layer of Mexican cornbread (which probably has some cheese and some peppers in it?).

Do you like black olives? I'm just trying to think of something else to contrast with the richness of chili, cheese, tamale.
