Is there an example of someone doing this other than a guy working for his dad at a small school he didn't attend preparing for his future career?

No, and I was surprised by this.

I would think LSU and other big schools can afford to have a full staff of coaches and wouldn't waste one of those spots on an "unpaid assistant" that was a former player that is a now a star in the pros to gain some theoretical recruiting advantage.

Well I was only half-kidding about LSU, but I know there are at least some expendable positions.

There is a reason Ensminger went from OC at Texas A&M and Clemson to Wide Recievers coach at West Monroe. He is an average AT BEST recruiter and our Tight Ends have looked average AT BEST under his tutelage.

Even if all he does is BBQ, that's just an anecdotal example. Most big schools I'm sure would not waste a coaching spot to have a former player as an unpaid assistant to help recruit as an end around some NCAA restriction. And I don't think it would be that big of an advantage anyway.
