This is very important. Always cook to temperature, not time. The dual probe of the maverick lets you know exactly what's going on in your grill and with the meat.

This is the one I have and I highly recommend it.
I also did a Buston Butt for my first cook on my Grill Dome. It came out great - below is after I pulled it.
