I cook a lot of curries in my crockpot. They're pretty simple (chicken, coconut milk, assorted veggies and seasonings) and they're good. Plus you can get several meals out of one crockpot.
I can't find the exact recipie I use, but here's one I bookmarked. If you Google crockpot curry, you'll get a kajillion results. LINK /

Another crock pot staple I do is little cheap arse round steaks, with whatever veggies I have (carrots, potatoes, onions, mushrooms, etc) and red wine/beef broth.
