Because nobody wants to see it because it's pointless.
People watched the LSU/Bama rematch because it meant something.
Nobody is going to watch USCe/Clemson again. At least not from a national perspective.

It's money and only money. Bowls want people to travel, buy hotels and gas money. Peach doesn't want UGA. Cotton really doesn't want Texas AM. It's money.

That game was for the championship and you wanted to get the best 2 teams in the game. The chick fil a, cotton, cap one, et al are just (essentially meaningless) exhibition games where the #1 objective is to make money.

I do not know one person that is sitting there going "can't wait for that Clemson/LSU game. At least Clemson/UGA-SCAR are rivals.

If either team were relevant it might matter, but neither is so everyone wants a different opponent.
