I have a room on my shop for butchering and a walk in cooler. It's taken a while to amass the stuff needed but I have a 3/4 hp grinder, band saw, slicer, tenderizer, smoker, vac sealer, etc.

I buther everything myself, and also butcher cows and pigs from the neighbors when we trade out hay. It's really not a big deal/time consuming when you do it a few times. The walk in freezer is REALLY helpful when things get busy.
