the trick is to keep it simple. a lot of people try to out do each other and forget that a good piece of chicken, fried properly (a little extra crispy on the skin) with just the butter/franks sauce is what its all about. blue cheese, some celery. done.
so many places try to go over the top and get the craziest sauces, and the best breadings and all that.... buffalo style started with some cooks making an after shift meal and just tossing a few leftover wing pieces in the fryer and dumping a little hot sauce on them.
it seems like i always end up getting stuff thats either soggy (gross - either not cooked crisp enough, or breaded and soaking in sauce for too long) or trying to be gourmet (good, but doesnt hit that authentic taste of home for me).
