We will get in the restaurant occasionally. We buy the whole cap and trim ourselves. Also called spinalis dorsi. Sells out almost immediately everytime we bring it in for specials. Will likely have it a couple times in December with all of the volume.

Since this is the best part of a ribeye, what happens to the ribeyes that no longer have the cap?
