I think the NFL told them not to "ruin the moment"; the ratings for the game were sky-high, U2 and Green Day had just performed, and essentially everyone watching was cheering for the Saints. It may have been sportsmanship and nothing else because I don't know what other incentives the Falcons would have had. My only evidence is the timing of the punt block (first drive) and the fact that the O-Line left a hole big enough to drive a bus through.
