They are great to eat. But as was stated previously, you only yield 30% or less of meat per fish and they are hell to clean.
That being said, I would not load my boat with them, but I would definitely keep an ice chest full if they are biting.

They actually yield like 21-25% so not much meat on them. To give you a comparison black drum average around 27%, redfish around 35%, and specks around 40% or more.
Back to the original topic, I like the taste of sheephead. Just as good as black drum or redfish in my opinion.
