Johnny Cash - Don't Think Twice, It's All Right Cash was good friends with Dylan, covered several of his songs, and they recorded a duet of Dylan's "Girl from the North Country" that made album cuts for each of them. There's a Dylan/Cash bootleg that has them jamming together and singing several duets.

Pete Seeger did some Dylan covers too-- off the top of my head... A Hard Rain's Gonna Fall and he also does a nice cover of "Farewell" but I don't see that video readily available to link.

Jimmy Lafave is one of the best of the best at Dylan covers. Great versions on almost all of his records. Here is a compilation of live stuff that has some great versions: Jimmy Lafave - "Trail"

Kafka, I know you're a Byrds/White fan—here's something that, if you haven't already checked it out, you should: it's an interview with John York, the bass player for the second lineup: McGuinn/White/York/Gene Parsons. Unfortunately I can't find the entire interview, but here's a link to a small portion of it. If you haven't seen this interview in its entirety, I strongly suggest you hunt around for it on youtube—it's broken up into something like 13 or 14 3-minute clips. York has a ton of fascinating stuff to share about his 1 1/2 years as a Byrd. A must-view for Byrds junkies. LINK
