According to HELMET HUT, LSU made the switch from "old gold" to "athletic gold" in 1956. My guess would be that maybe they wanted to differentiate themselves from other schools using "old gold" helmets like Navy, Army & Notre Dame. The "athletic gold" was a much more unique color in college FB among the big schools compared with the "old gold."
Here's an excerpt from Helmet Hut's website:

It's highly plausible that Dietzel, or any other coach for that matter, would want to put a lasting mark on a program.

Before 56 and the birth of PMS colors each person's interpretation of what PURPLE and/or GOLD was different.
It was not as much a change IMO, as the process of trying to standardize the look of the school colors... such may have resulted in change from the previously used colors.
