Well, that's what I'm thinking - it wasn't coincidence. They made it a reality after Bruce reached out to Alfred to let him know he wasn't actually dead. It would seem unreasonable that a fictional dream of Alfred's would suddenly just occur, just as he had dreamed.

Also, when Alfred told Bruce about his dream for him, didn't he tell him that he had been imagining that while Bruce was away from Gotham (back during the events of Begins) - that he had left forever to make a life for himself, and that he would never return?

Yes. He said exactly that.

The whole point was that for the period he went missing in Begins, Alfred dealt with it by assuming he was alive, somewhere, happy with his life, and all ties severed from Gotham.

He even tells Waye specifically which cafe he went to regularly.

IMO, that scene doesn't make sense in any other way than that was Bruce telling him that he was not only alive, but happy.
