The new multi-color collar on the Nike jersey was something requested by the players. When the NFL sent out the survey in 2006 on what players would like to see changed in their uniforms, a more relaxed and comfortable stretch collar was requested by most of the league. It it designed to prevent the jersey from coming off the shoulder pad as much as it has in the past as well.

That doesn't mean it has to be two tone, a lot of teams didn't choose to go with a two tone collar.
