Versus say the ex con crack head or meth head clock puncher who couldn't give a rats arse about your food working in the kitchen scratching his nuts and plating your food?

I see the reasoning. Much better when you can't see whats going on.



Most of the trucks have someone taking your money and another cooking and plating. I'm sure when it gets busy though there's some of that, but the way I see it is there are much easier ways to cook food than on a truck. There has to be a lot of love for what they are doing, so I trust them much more than George behind closed doors who couldn't really give a shite.
