Might be the impeller wearing out and not having a good suction for water pickup. You are right the thermostat would not come into play until it reached the temp needed to open. That would not be happening at the launch when you drop the boat in the water...

ETA, an impeller kit is only going to cost you ~$50 I would replace that and see how it goies. You are looking at a couple of hundred for a trip to a shop, plus drive time there and back...

There are two pumps on that motor.The lower one slides over the main shaft that goes over the foot.It is not wise to change just the impeller.Not a hard job though.
