Is it a trust, estate, or partnership?

partnership
Company has been "getting to the form" for a few weeks now. Just want an idea what their absolute send-by date is.

Generally the partnership return (1065) is to be filed by the 15th day of fourth month (April 15th). Partnership can file a 3 month extension, which is likely. There are 1/2 other ciircumstances linked to earnings generated outside of U.S.
My guess is you will get it in July. Estates & Trusts can be even later.

Can I file my personal income tax without having it in hand?

Don't quote me, but get a hard estimate from the preparer and file your return. When you get the actual, file a amended return. I have done this because of having to file a FAFSA for one of my children.

The partnership was formed at the end of December. No income. Don't want to to have to pay extra to do an amended return if I can help it.

I would file return, wait for K-1, probably no need to file a 1040X amended return.
