re: cutting hind quarters

Observations:

Very sharp boning knife
Great knowledge of deer anatomy
Hay hook
Large waist high table to work on
Pushes and pulls knife from the shoulder instead of with bicep or wrist to prevent cutting himslef. Most movements are away from his body



FWIW Outdoor Egde has a great dvd series of game processing where he discusses the enitre process and walks you through step by step. Including naming the different cuts of meat, proper storage, how to age meat, and what each cut is best suited for.
