The Beatles - Probably the most versatile band ever.
Wilco - Being There is proof enough they can handle everything. Throw in pop-masterpiece like Summerteeth, grunge-discord like YHK and you pretty much have everything under the sun.
Buddy Holly and The Crickets - Although we didn't see them do TOO much, I really think all the pieces are there.
Tom Waits - Probably the most versatile musician ever.
Rolling Stones - Nuff said.

Ray Charles, The Beach Boys, RHCP, Queen

Certainly not Sublime. Look, I like Sublime, but they are pretty one note.

Geez...

The Stones
Drive by Truckers (they've been the backing band on blues and country albums, as well as won a Grammy with Booker T in place of the MG's)
Fugazi (Ian MacKaye is a chameleon if he wants to be - name me someone else who could be in both Minor Threat and the Evens)

To be honest I hated that album for the same reasons that I really enjoy what Uncle Tupelo did. The original Uncle Tupelo would be a good candidate for one of the five bands. And I think Zappa would be pretty damn good at it too.
