Go with the Xbox and Kinect bundle. Just as many kid friendly games on Xbox as Wii and you will have more options for other games for you when your son isn't playing.
No idea why everyone is listing their consoles, but ok...

360 with kinect is probably the easier thing to use for an 8 year old
wii is a bit more complicated then it seems for a kid. PS3 is more geared towards adults with the layout and the fact u have to use blue tooth stuff with it
