From what I can remember, that was the biggest thing I did differently. I'd have tried the pork, actually, but I already had beef... I also cut the ground meat by half and used some chipped eye of the round steaks I'd braised a bit to make up the difference. I think that and the cubed beef gives a chili more substance.

I added beans, too (about half a cup each of black and pinto), but I know you already said you don't like them in your chili, so...

The roasted chiles are a nice touch, I wouldn't skip that step...
