the problem with stainless steel is there are different alloys....18/10 is the best for cooking(Chromium and Nickel) but due to induction stovetops a lot of companies have changed the alloy mix....Cuisinart and Calphalon come to mind and no longer give the alloy rating. If you want a 18/10 alloy then as far as I know, All Clad is the only one giving this rating. And all stainless steel is not alike which is why you will see some stainless steel rust.
