help me with a menu , I need ideas

I'm cooking every night next week, what is your favorite meal.

1st night Simple fare, as they will have been traveling and won't appreciate a damn thing but food in face. Go with a cassoulet(white beans with duck breasts and sausage).
2nd night Time to pull the gloves off. Yet keeping it simple none the less, and as the price is cheap. Crawfish etouffee.
3rd night Must break a sweat sometimes, so out to the grill you go(remember hydrate), assuming a table of four bigassed ribeyes, grilled asparagus and corn.
There is half the week, I'll be back tomorrow to finish it off.

Nothing super original here, but all proven and widely liked dishes...(in no particular order)
Gumbo
Steak and potatoes
Lasagna
Chicken spaghetti
Fried catfish and hushpuppies
Grilled burgers and sausages with potato salad
Slow cooker roast, homemade gravy and mashed spuds
Little more difficult...
BBQ shrimp, NOLA style
Crawfish etouffe
Smoked brisket or tri tip
Smoked salmon
Beef Wellington
Real casual...
Soft and crunchy tacos...build your own (lay out different ingredients)
Homemade pizza
Gumbo
Steak and potatoes
Lasagna
Chicken spaghetti

During summer I like to grill some marinated chicken thighs along with Italian Sausage and Roasted New Potatoes.
I reserve the sausage for pasta the next day.
