I'd probably look at STI's first..... And don't not buy a 1911 because it doesn't have a ambi safety.. any decent gunsmith can install on for you after market easily.

No idea what they cost, but have you looked into a colt 1991? It's pretty much a 1911 with a different number stamped on it. I know a guy who had one (it got stolen) and he swears it was one of the better 1911 style guns he's fooled with.
