Pot roast:
-Salt/pepper duck,
-sear golden brown on all sides,
-saute 1 onion chopped, 1 chopped bell pepper and a few cloves of garlic in the same pot as you seared the duck
-when vegetables are soft, pour 1 cup of red wine w/ 1 table spoon of worsectershire sauce into pot to deglaze the bottom.
-stuff duck cavities with 1 half onion and some garlic. (can layer uncooked bacon over the duck if you want)
-roast til you can pull the leg bone out without any resistance (depending on duck size usually 2-2.5 hours.)
